Alpine dairy

The fresh morning milk and milk from the previous evening - stored in a cool place overnight - are heated together in a cauldron ... and so begins the production of all aromatic local cheeses which appear fresh on the table at the end of the Alpine summer.
At the various traditional autumn Cheese Distribution Festivals, the mountain cheeses are shared between the local farmers, with some offered for sale. Cheese-makers will be pleased to demonstrate their craft. Will they reveal some of the secrets of traditional cheese-making?
